Ghost Box Pizza offering modernized pies in Lafayette

The creative culinary experts at Stem Cider and Acreage continue to spread their wings with a modern new pizza place in Old Town Lafayette. Ghost Box Pizza recently opened, serving thoughtfully prepared pizzas and a lengthy list of drinks. 

“After the second shutdown in November of 2020, and finding the farm-to-table menu at Acreage very difficult to sustain, we started selling Detroit style pizza out of Acreage as a ghost kitchen,” explains Sarah Ingraham, director of restaurant operations for Ghost Box Pizza and Acreage. “Very quickly, pizza stole the show and we knew we had something great.”

When it comes to ordering a pizza, there are two options at the location at 103 South Public Road. The Detroit-style is a thick, hearty, rectangular pizza, available in small (serving one to three people, sized 8 inch by 10 inch) or large (serving three to four people, sized by 10 to 14 inches). The thinner wood-fired pizza is available at 14 inches, with gluten-free and vegan options.

You can create your own pizza with a variety of ingredients – Hazel Dell mushrooms, spinach, tomato, prosciutto, mortadella, peppadew peppers and arugula, to name a few. Choose from red pizza sauce, garlic cream or a garlic and oil sauce. 

Or, opt to order one of the curated pies. Detroit-style pizzas include a margherita, spicy pepperoni, chicken and bacon ranch, mortadella and melted onion and a potato rosemary, with roasted fingerling potatoes, melted onion, garlic mascarpone and rosemary. A favorite so far has been the ghost pig with bacon, charred pineapple, red sauce, red onion, ghost pepper sauce and jalapeno.

Wood-fired pizzas include The Fun Guy with garlic cream, mushrooms, melted onion, fresh basil and truffle oil. Sausage and mushroom, margherita, veggie and prosciutto are also options. There are also desserts, a kids menu and salads, too. 

In addition to pizzas, appetizers include cheesy bread, burrata and meatballs. Eggplant caponata, sweet and spicy chicken, meatball sub and a toasted Italian sub are a few of the sandwiches. 

There are 10 beers and two ciders on tap with more ciders available in cans. 

“As part of Stem Ciders, of course we want to have some Cider options, but we also needed a well-rounded wine selection that is affordable and great,” Ingraham says.

Beers are mostly local to Colorado and include The Post, Great Divide Brewing, Odd 13, Liquid Mechanics, Avery Brewing Co., Odell Brewing, Ska Brewing and Cerveceria Colorado, to name a few. Beers will likely rotate every three months to change with the seasons as well as showcase new styles as breweries release new beers.

There is an eclectic wine offering with a variety of styles, including Sauvignon Blanc, Pinot Grigio, Cotes de Gascogne, Chardonnay and Soave. For red wines, Cabernet, Montepluciano, Pinot Noir, Cabernet and Zinfandel are some of the options. 

Whether you like sweet, smoky or spicy cocktails, traditional or something unique, there is a cocktail for everyone. The Apple Pie is Tito’s vodka, lemon juice, fresh apple juice, green apple and cinnamon dust. The Lavish Lemon is vodka with a lavender infused lemonade.
