Kevin and Ryan Taylor turn casual with Hickory & Ash

From the Ellie Caulkins Opera House to the Arista Broomfield community, Kevin Taylor and company are staying at the fore of metro area cuisine.

He has teamed up with his son, Ryan Taylor, to open Hickory & Ash, a casual space that is catty-corner to the 1stBank Center. Opening day is July 7.

Kevin Taylor, a Colorado native with deep roots in the downtown Denver dining scene, is best known among the theatre crowds for Kevin Taylor’s at the Opera House in the lower level of the Ellie Caulkins Opera House, and Limelight Supper Club & Lounge, facing the Buell Theatre. He also has Palettes Contemporary Cuisine at the Denver Art Museum. However, he is eager to swing open the doors in Broomfield with a more casual experience. “We’re excited to move beyond our white-tablecloth roots,” he said. “Hickory & Ash will provide a more approachable, yet still chef-driven experience from a service-oriented, passionate team.”

At Hickory & Ash, the duo has created a modern American meatery, featuring locally sourced ingredients.

Ryan Taylor will serve as chef and will open with the following menu. “I set out to create a menu in which everything we source or purchase is used in some way, shape or form,” he said. “From the vegetable scraps to the trimming of fish and meat, we utilize every bit to make great dishes.”

The restaurant has partnered with nearby Wonderland Brewing Company and Mad Rabbit Distillery to provide craft beer and cocktails at the 5,500-square-foot space. The Hickory & Ash Amber, an altbier, is available only at the restaurant and at Wonderland’s taproom.

The restaurant will seat 120 guests in the main dining room, about 66 guests in the private dining room and up to 36 on the outdoor patio. 

Dinner will be served from 5-10 p.m., seven days a week, with happy hour from 5-7 p.m. Lunch and weekend brunch are also scheduled in the near future.
