Last-minute Christmas recipes and Colorado beer pairings

It's beginning to feel a lot like Christmas … wait, it is in fact Christmas on Saturday, in case you hadn't noticed wreaths on every door, Santa in every store, and “Last Christmas” on every radio. If none of this is sounding familiar, you've either procrastinated for too long or you have an exceptionally acute selective hearing problem. 

Rest assured, we have some last-minute pairing advice for you on your holiday dinner, just in case you've let it slide to the last minute. 

So, head down to your local liquor store and grocery story to salvage that Christmas dinner that everyone is looking forward to.

A couple of notes on these beers: First, most of these are fairly high-ABV, so they are perfect for sharing with your guests, especially if you pair every course with one of these brews.

Also, we still love all the smaller craft breweries out there, but frankly if folks are still looking to us for holiday meals plans, they probably don’t have time before Saturday to drive across town, hang out in the taproom and pick up a fresh crowler. Most of these are pretty widely available in cans and bottles around the state.

Bristol Brewing Belgian Quadruple

This big and luscious Belgian-style strong ale has a little bit of sweetness, so it pairs nicely with the subtle sugars in a sweet potato appetizer. This big dark amber beer offers hints of plum and other dark fruit, as well as dark rum and molasses flavors. It’s also medium-bodied, mellow, and deceptively smooth for its 9.3 percent ABV.

Odell Brewing Isolation Ale

Match a Colorado classic with another Colorado classic. It’s not the most obvious choice, but Colorado lamb is one of our finest culinary products. And Isolation is another fine export. Don’t call us basic; there’s a reason this beer is in nearly every tap room and grocery store this month. It may be a perfect winter warmer to please everyone at your holiday table — sweet caramel maltiness balanced with just the right hop finish.

New Image East Coast Transplant

New Image may be in Arvada, but the brewers go back to their childhood roots on the East Coast for inspiration on their New England style double IPA. Do you have friends flying in from back east? Make them feel at home with this beer. IPAs go great with many spicy dishes and a spicy/sweet Brussels sprout recipe proves to be a delectable combo. Their clear and fresh IPA cleans the palate after every bite, while the aromatics of the beer and bitterness of the hop profile amplify the foods salty and spicy characteristics.

River North Dark Sorceress

Finally, you could have this imperial porter as dessert. Heck, it almost counts as a meal. River North is known for some heavy barrel-aged stouts, which we also recommend. But the Dark Sorceress is a new limited-edition offering that was tapped last month. At 15.2 percent, you can’t miss the booziness. But you also get touches of winter spices, toffee and caramel. Pick up two, and age one for next Christmas.
